  • Winemaking: Hand-picked grapes. Direct whole-cluster pressing. Brief ageing in 400-litre third-use barrels on Sauvignon lees, with bâtonnage.
  • Serving temperature: 10–11 °C
  • Alcohol by volume: 11–11.5% vol.
  • Tasting notes: Pale sandy-grey colour. Bright and distinctive. Aromas of fennel laced with fresh lavender. Subtle and complex at once. The palate is crisp and tangy, true to Cinsault, revealing lavender, fresh almond and delicate marzipan-like notes.
  • Food pairings: Sushi and carpaccio.
