Perched in the Roussillon highlands at Sournia in the Pyrénées-Orientales, our 8-hectare organically farmed estate lies above 600 metres in altitude. This exceptional setting is what lends our wines their remarkable freshness and unique elegance.

LA MOULINE
IGP Côtes catalanes
- Organic grape variety : Chasan - Sauvignon.
- Winemaking : Hand-harvested. Direct pressing of whole clusters. Aged on fine lees.
- Serving temperature : 10 - 12°C
- Alcohol content : 12% - 13.50% vol
- Tasting notes : Pale yellow robe. Fruity nose with notes of fresh fruit, pear and a complex hint of grapefruit. The palate is beautifully balanced, with a round attack and an entry carried by lovely minerality. Fruit takes centre stage, leading to a very long finish marked by intense exotic fruit (mango, passion fruit). An invitation to travel.

A bright white wine with delicate golden reflections.
The nose is strikingly fresh and fruity: floral aromas, juicy apricot, honey with Muscat-like nuances, and subtle layers of soft spices.
The palate is round and vibrant, carried by fine tension and a creamy, savoury richness. Retro-olfaction reveals vine peach and white blossom notes.
The finish is gourmand, silky and appetising.

On the heights of the Roussillon
Fully certified organic, Domaine Aïchoux is nestled in the heart of the Fenouillèdes, in Sournia, in the Pyrénées-Orientales.
Our vines, planted at over 600 metres in altitude, impart to the wines an incomparable freshness and elegance. Rooted in a rare geological overlap zone, our grape varieties benefit from exceptional soil diversity: sandy-loamy granite, metamorphic siliceous-limestone, and quartz gneiss.
This unique combination of soil and altitude gives our wines a truly distinctive signature.
Domaine Aïchoux embodies a dual commitment: to people and to nature.
A deeply human project : The estate is run by the E.S.A.T. “Les Ateliers de Val de Sournia”. Our mission is to promote the professional and social fulfilment of people with disabilities, making every bottle the tangible result of a genuine approach to inclusion.
The Art of Minimalism : guided by the expertise of Gabriel CASTANY, our work in both vineyard and cellar is driven by respect for the soil and the fruit. We adopt a resolutely minimalist approach, using as few inputs as possible. From the complete absence of synthetic products in the vineyard to carefully measured intervention in the winery, everything is done to allow the pure expression of our high-altitude terroir — unmasked and unadorned.

- Minimalist Approach: gentle winemaking, limiting inputs to never mask the taste.
- Purity of Altitude: allowing the freshness and natural tension of our terroir to shine freely.
La vigne
No miracle formula, only absolute attentiveness. The grape is a living being; it forgives nothing half-hearted. We adjust to every vintage, guiding the fruit with care and never imposing. This unwavering attention to detail is what elevates sound grapes into wines full of emotion.
The Equipment
The choice of winemaking equipment combines several advanced features: a nitrogen generator (nitrogen being a natural component of the grape) for inerting all stainless steel tanks from 1 to 16 HL (micro-vinification), a highly sophisticated temperature control system for precise extraction of aromatic compounds, as well as an impulse sorting table followed by a conveyor and a peristaltic pump that preserves the original integrity of every single grape berry.
Finally, a state-of-the-art pneumatic press is coupled with highly advanced software. It refines the maceration process to ensure perfect extraction from the vat grapes.
The Method
We opt for soft, whole-bunch macerations and patient élevage in breathing containers—clay amphorae, terracotta, oak—that permit the wine to breathe freely. In serene coolness, we entrust time to do its silent work, yielding vibrant, balanced and profoundly authentic wines.
